ROSEMARY AND BLACK PEPPER CRUSTED SILVERSIDE JOINT FROM THE MEAT MAN 🥩 Winner winner, roast beef dinner! But not just any roast dinner, a Meat Man roast dinner! Here’s how to cook up your Silverside Joint this Sunday… 🌡️ Preheat the oven to 220 degrees Celsius. 📦 Remove all packaging from the joint and place on a baking tray. 🧂 Finely chop the leaves of 3-4 sprigs of rosemary and sprinkle these over the joint along with a 1tbsp sea salt, 2tbsp black pepper and a 1tsp sugar. 🥩 Rub them all in, all over the joint. For a 1.2kg joint cooked medium: Place in an oven at 220 degrees Celsius for 15 minutes and then turn the temperature down to 180 and cook for a further 45 minutes. This should give you a blush pink middle. For more pink, reduce cooking time by 15 minutes. For more well done, add another 15 minutes.
