Strain over fresh ice into a double rocks glass and garnish with a crispy slice of Iberian papada. For the fat-washed rye 300 ml WHISTLEPIG Old World Rye Aged 12 Years 50 ml rendered Iberian papada fat Cook the papada over medium heat until the fat renders and the slices turn crispy. Combine 50 ml of rendered fat with 300 ml of rye in a sealable glass jar. Stir briefly, seal and let the fat separate.
