Macros (serves 4) • 489kcal • 39.5g P • 59g C • 20g C Ingredients: • 250g healthier frozen chips • 8 small corn tortillas • 500 grams lean minced beef (95% lean) • 1 tsp each dried oregano, ground paprika & salt • ½ tsp cumin & cinnamon • ¼ cup chopped parsley • ½ red onion finely diced • 3 cloves garlic minced Tzatziki: • 1 cup thick low fat Greek yoghurt • ½ cup grated cucumber • 2 tbsp chopped dill • 2 tbsp lemon juice • 1 large clove garlic grated • ½ tsp salt Sumac tomato salad: • 250g cherry tomatoes quartered • 2 tbsp chopped parsley • 3 tbsp mint thinly sliced • ½ red onion thinly sliced • ½ tbsp olive oil • 2 tsp sumac & ½ tsp salt Garnish: extra chopped parsley Method 1. Make the tzatziki: Combine all ingredients in a bowl and mix well. Set aside. 2. Prepare the salad: Add all ingredients to a bowl and toss to combine. 3. Cook the chips: Air fry chips in @froothie air fryer at 200°C for 14–16 minutes, shaking halfway through, until golden and crisp. 4. Prepare the beef: In a large bowl, combine the minced beef, onion, garlic, herbs, spices, and parsley. Mix well using your hands. Divide into 8 portions. Place one portion onto each tortilla and press firmly, spreading the meat evenly to the edges of each tortilla. 5. Cook the tacos: Heat a large frying pan over medium–high heat. Place each tortilla meat-side down and cook for 2–3 minutes until browned and crispy. Flip and cook for another minute, until the tortilla is golden. 6. Assemble: Spread a generous spoonful of tzatziki onto each taco. Top with crispy chips and sumac tomato salad. Devour!
