Slow Cooker Veggie-Loaded Spaghetti Bolognese 🍝 One of my favourite dump & go dinners because it’s so easy, packed with veggies and the whole family loves it! I’ve been using @farmerspickau for our weekly shop and love that I can get more than just fresh fruit and vegetables. I can also pick up meat, dairy and pantry staples, which makes meal planning and getting everything we need for the week so much easier. For this one, I used their beef mince and fresh veggies, along with Mingle’s Spag Bol seasoning for an easy, flavour-packed dinner. Ingredients: 500g beef mince 1 jar passata sauce 1 tin crushed tomatoes 1 packet Mingle Spag Bol Seasoning 250ml beef stock 1 onion, diced 2 cloves garlic, crushed 1 zucchini, finely diced or grated 1 carrot, finely diced or grated Dash of honey Salt & pepper, to taste Spaghetti, to serve Parmesan cheese, to serve Method Add the passata, crushed tomatoes, Mingle Spag Bol seasoning and beef stock to your slow cooker and give it a really good mix until combined. Add the beef mince and use a wooden spoon to break it up and mix it through the sauce. Add the onion, garlic, zucchini and carrot. Add a dash of honey, season with salt and pepper, and give everything another good stir. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours. When ready, cook your spaghetti according to the packet instructions. Serve the veggie-loaded bolognese over spaghetti and top with plenty of Parmesan.
