Pumpkin spice waffles topped with cinnamon apples 🎃🧇🍎🧈 Fall is here, and I’m wasting absolutely no time adding pumpkin spice to everything 🍂 I used Farm Girl’s Vanilla Pancake & Waffle Mix as the base. It’s gluten-free, has 0g of added sugar and makes whipping up a stack of fall waffles ridiculously easy! For the waffles: 1 cup Farm Girl Vanilla Pancake & Waffle Mix 1 tsp pumpkin pie spice 1 egg ⅓ cup pumpkin purée ⅓ cup milk of choice, plus more as needed 2 tbsp melted butter or neutral oil ½ tsp vanilla Pinch of salt Mix everything together and let the batter rest for 3–5 minutes. Add another splash of milk if it’s too thick, then cook in a greased waffle iron until golden and slightly crisp. For the cinnamon apples: 2 apples, diced 1 tbsp butter 1 tbsp maple syrup ½ tsp cinnamon Pinch of nutmeg Pinch of salt 2 tbsp water ½ tsp vanilla Add everything except the vanilla to a small pan. Cook over medium heat for 8–10 minutes, stirring occasionally, until tender and syrupy. Stir in the vanilla, spoon over the waffles and finish with maple syrup 🍁 💾 Save this recipe for your next fall inspired breakfast!
